• Entrée
  • Mushrooms soup with Oaxaca cheese.
  • Fresh fish Caribbean ceviche marinated in citrus juice and passion fruit with pineapple and coriander.
  • Esquites salad with lemon vinaigrette and pasion fruit mayonnaise corn, watercress, spinach and crunchy tortilla.
• Main Course
  • Salmond with tamarind mole, white rice and vegetables.
  • Chicken breast stuffedwith dried tomatoes, mozzarella cheese and basil, home made pasta sautéed in a coriander and pumpkin seed pesto.
  • Coconut wrapped in a banana leaf with soy sauce, bacon, peanuts, ginger and cilantro. Green papaya and rice salad with tamarind dressing.
• Dessert
  • Cheese and soursop cake wih red fruits sauce.
  • Corn cake with passion fruit sauce and sweet cream cheese.
  • Vanilla ice cream with flambeed bananas.
  • Mole and Mexican chocolate brownie with avocado cream.
